Mango Smoothie – Perfect Way to Start a Day



Hope you are enjoying your day..I was so busy today cooking for more than 15 people..It is not really a normal lunch, it is a professional lunch. YES this has taken me to the next level..The menu was in the style of a complete and proper lunch. It started from a starter of paneer fingers,vegetable salad and chicken 65, followed by a main course which has egg briyani, onion raita,chicken curry, tandoori chicken, paratha and channa masala. Its not over yet, everything needs a desert right so we had a yummy mango cheese cake which is soooo good..I am so happy that cooked for a Australian family and that uncle is a chef. I am so happy to cook for them.We all enjoyed lunch so much and had a great time together..


Now coming to the recipe..Such a easy shake to make, if you feel not to cook anything or don’t want to have something so heavy..Then I would tell you to try this, it is perfect for those days..It makes you so refreshing as well as makes you full. Please try it tell me how it turned out..


Ingrediants:

Ripe Mangoes – 1 large peeled and chopped
Cold Milk – 2 cups or adjust
Sugar to taste

Method:

Take everything in a blender and make into a fine puree. Adjust the milk level as per you wish.

Serve immediately. Taste best when it is cold.

Quesadilla with Scrambled Eggs & Cheese – Breakfast Quesadilla


I was so dull and dizzy this whole day, my whole body was paining like hell..Finally I realized that I am having a cold fever. Now it is pretty controllable and my pain was a lot more reduced..My totally family is just kidding me that this is not cold fever, but it is “WEDDING FEVER”..I don’t know if it is true or not( Believe me). Hopefully I should get relieved tomorrow and start my week with a blast.


Now coming to the recipe..I was thinking for a recipe which starts with the letter “Q”..I know it has to be quesadilla, but was searching for a nice stuffing for that. Finally decided to make a simple breakfast quesadilla with eggs and cheese and it cameout so good..How couldn’t it not be good, anything with eggs and cheese is wonderful right..Grilling the tortilla till it turn golden make the outer layer turn like a crispy shell that contains the creamy egg and cheese.. I hope you will like it and tell me how it turned out. This recipe is for Blogging marathon day 6 ‘cooking with alphabets’ letter “Q”.

Ingrediants:

Flour Tortilla – 2 ( Click here for recipe)
Eggs – 3
Cheese – 4 tblspn grated ( I used Mozarella)
Olive Oil – 1 tblspn
Coriander leaves / Cilantro – 4 tblspn chopped
Salt to taste
Pepper to taste

Method:

Crack open 3 eggs in a bowl add salt and pepper and beat well.

Heat a tblspn of oil in a kadai and add in the beaten egg and start scrambling it.

Cook as per your liking. Add in cheese and mix once.

Now take a tortilla and sprinkle some cheese on one side of the tortilla. Spoon some egg mixture on top and sprinkle with lots of cilantro.

Fold in half and brush both sides with oil. Place on a hot tawa and cook on bothsides till golden.

Remove and cut into half.

Serve immediately.

season them with some salt and pepper
whisk to mix
Heat a tblspn of olive oil in a pan and pour the eggs in that
and mix well
till they get the right consistency
add in lots of cheese
and mix well
Take the tortilla in the front of you and sprinkle cheese on one side of the bread
add some scrambled eggs on top
and sprinkle lots of cilantro
fold it
and brush them with some oil
and put them on the tawa
and grill on both sides
remove them and cut it
and enjoy..

Onion Dosa / வெங்காயம் தோசை / Onion Podi Dosa / Crispy Crepes with Onions & Coriander Leaves

I always wanted to post Onion Dosa recipe in my blog. I know it is simple to make, but this is my favorite.. I eat it always..So how would i not post it in 'MY' blog..Onion dosa is pretty easy to make, but i add some extra special things like coriander leaves and idli podi in mine..I think it taste great that way..




The key to a good onion dosa is the bottom should be crispy but the top should be little bit soft..So you should cook the bottom layer a little longer than the top..I thought of posting it for the letter 'O' for the cooking with alphabets series..

Makes : 1 Huge Dosa

Ingredients:

Dosa Batter - 1 cup( Makes one huge dosa) (Click here for batter recipe)
Idli podi - as needed ( You can buy in any super market)
Onion - 1 large finely chopped
Coriander leaves / Cilantro - 4 tblspn finely chopped
Oil- 3 tblspn

Method:

Heat a tawa on high heat.When it is hot. Take a cup of batter and spread it like dosa(Not so thinly, make it a little thicker)

Sprinkle it with lots of finely chopped onion, coriander leaves and idli podi and press it slightly…

Drizzle some oil all around the sides as well as middle…Let it cook till the botton crisp up.

Flip over carefully and cook only for a min. Drizzle more oil if needed.

Remove and serve hot.

Spread the dosa
drizzle some oil...This is a huge dosai
sprinkle with onions and coriander leaves generously

and sprinkle some over the dosa
When the bottom is golden..Flip over and cook
Serve

Coconut Milk Aapam / Palappam / Vellayappam - Kerala Breakfast Thali

Simple Breakfast Thali from Kerala
When Valli announced Thali Mela..I was quite excited to do that, because in our house we almost eat thali meal. Somedays it will be simple everyday thali and some day it may be a huge traditional thali. I am planning to post quite a few thali through out this week..Starting from some basic everyday thali from different places to a festive thali which we prepare often in our house.

I start this week with a simple everyday breakfast thali from kerala. You know appam, puttu are a staple foods in keralan breakfast meal. They love it so mush as I do. I have my mum's aapam recipe in my blog before itself..But I wanted to try the coconut milk aapam which they do..So I did that..Aapam with egg curry taste like heaven along with some simple coconuty vegetable stew make it even more delicious..My mouth is watering when I write this..The meal was a complete hit.


Ok now this simple breakfast thali has

Coconut Milk Aapam
Nadan Egg Curry (I will post very soon)

Other Variations:


This Aapam is so good..They turned out so soft, I mean soooooo soft and porous..Dipping them in that spicy egg curry was so good..if you want something mild you can make that vegetable stew.I made this for breakfast last Sunday. I hope you too will love it and let me know what you think..


Ingrediants:

Rice Flour / Arisi mavu - 2 cup ( Raw or Roasted, Ur Choice)
Dry Yeast - 1 tsp ( Rapid Rise)
Coconut Milk - 400 ml ( Thick)
Grated Coconut - 1/2 cup ( Ground coarsely)
Sugar - 3 tblspn
Salt to taste

For Kappi:
Rice Flour - 1/2 cup
Sugar - 2 tblspn
Water - 2 cup

Method:

Start by making the kappi.Take rice flour, sugar and water in a sauce pan and start cooking. Mix well..they will get thick and gooey. Switch off the flame and allow them to cool down completely.

Take yeast in a small bowl add some warm water and mix well. Let it sit for 7-8 mins till they rise.

In a large mixing bowl, use a large bowl, You are going to ferment the batter in that bowl. Add Riceflour,salt, sugar, coconut and mix well.

Pour coconut milk in that and make into a smooth batter. Add the yeast water and the cooled kappi and mix well. Add more water if needed.

Cover it and let it sit in a warm place till they rises. It will take around 6-8 hours.

Now mix well. Adjust the salt and sugar level.

Heat a appam chatti or a tawa and pour a ladle ful of batter in that. Cover with a lid and let it cook for a min.

Now remove them and serve with your favorite curry.

Now make the batter..take rice flour,salt, sugar, coconut in a bowl

cover and let it ferment for 6-8 hours
they will puff up like this
Now pour a small ladleful in a tawa or appam pan
cover and cook
till done
Serve..they will be so soft and spongy

Kothumai Inipu Dosai / Sharkkara Dosa / Jaggery Dosa / Vella Dosa / Wheat Flour and Jaggery Pancakes - Instant Dosa Recipes / Breakfast Ideas


When we were little kids. We always used to annoy amma asking her to make something for evening snacks..But amma was so consicious about our health, so she never deep fries anything. Instead she make this sweet pancakes for us. She used to make this with pure homemade ghee which amma makes at home. Sometimes she throws some cashews or any nuts in that to make it more healthy and flavourful..As a kid we loved it a lot.Even now my sister ask my mom to make it often. Thinking about this reminds me about my childhood days..



When I was thinking about what dosa to make for today. I thought why not I make this dosa which I growed up with…And I tried it yesterday for dinner, actually I made this for my mother and she totally enjoyed it..The combination of wheat flour and jaggery is perfect in this dosa..I added some rice flour to make the dosa little crispier..You could do this without adding any rice flour too..I hope you will love it for sure ...I am sending this recipe to Blogging Marathan Day 6 under the theme Seven Days of Dosa Recipes.

Ingrediants:

Wheat Flour / Atta - 1 cup
Rice Flour - 1/4 cup
Jaggery / Sarkarai / Vellam - 1/2 cup Grated
Coconut - 3 tblspn
Cardamom / Yelakai - 3 crushed
Salt a pinch
Ghee / Oil for pan Frying
Water as needed

Method:

Take jaggery in a saucepan and add some water and bring it to a boil Mix well so that the jaggery dissolves in the water. Now strain this mixture through a sieve and allow them to cool down.

Take wheat flour, salt, crushed cardamom, coconut in a bowl. Add the cooled jaggery water and mix well so that it doesn't form any lump.

Add water slowly and mix well. Make it into a dosa batter sonce

All done..Allow this to cool down
Take wheat flour, rice flour, salt, coconut, cardamom in a bowl.
mix well
pour the jaggery water

it should be like dosa batter consistency
make dosa out of it
drizzle some oil
flip and cook
Serve

Instant Maida Dosa / Dosa made with All Purpose Flour - Dosa Recipes


Instant recipes are always so comforting, since it takes very less amount to cook and you can have your meal from stove to stomach in few minutes..I have a instant wheat dosa recipe in my blog already and this one is going to be a addition to my other recipe..I am sure this is going to be a keeper.

When i first came across this recipe, i thought dosa with all purpose flour..Won't that dosa be so stringy..But i totally agreed with this one, once i tried it..This dosa cameout so crispy and yummy. I served it with sambar which we call as tiffin sambar..I will post that recipe so soon.This can be served with any chutney as well.

Ingrediants:

All Purpose Flour / Maida - 1 cup
Rice Flour / Arisi mavu - 1/4 cup
Onion - 4 tblspn chopped finely
Green Chilli - 1 chopped finely
Curry leaves- 1 spring chopped finely
Cumin Seeds / Jeerakam 1 tsp
Water as needed
Salt to taste
Oil for pan frying

Method:

In a mixing bowl add every ingrediants except water and oil and mix well.

Add enough water to make a thin batter. The batter should be a little thick that our rawa dosa batter.

Heat a non stick pan. Pour a ladleful of batter and spread it thinly. Drizzle some oil and cook untill the bottom crisp up. Flip over and cook till it turn light golden.

Remove to a plate and serve with chutney or sambar.

Sponge Dosa / Super Soft Dosa – Dosa Recipes


I am up with another week of Blogging Marathan with a new theme, this week theme is going to be 7 days of dosa recipes..I can see many of your faces are smiling..I know the reason, Dosa is a saviour of us all time…When my mother have no time to cook or have nothing in our house(except dosa batter), she will quickly ruzzle up some hot crispy dosa and some coconut chutney..How good is that…I really like dosa a lot, but I always want it to be different. I don’t like to have the boring dosa always..Sometimes I make onion dosa, tomato dosa with some crushed pepper on top(YUM YUM), vegetable dosa and many more..i am planning to post all sorts of dosa soon..So keep checking on..
Now coming to todays recipe, it is going to be sponge dosa..Yes which is entirely new to me when I heard about this first..But now we make it often at home..This is a soft porous dosa which stays soft for a long time..This taste great with spicy coconut chutney or tomato chutney..Hope u like it and let me know what you think..I am sending this recipe to Blogging Marathan Day 1 under the theme Seven Days of Dosa Recipes

Ingrediants:

Rice – 2 cup
Aval / Poha – ¼ cup
Buttermilk / More – 4 cups
Baking Soda – ½ tsp
Salt to taste
Oil for frying

Method:

Soak rice, poha in buttermilk overnight. In the morning add it to the blender, (if there is lots of buttermilk left please drain it, a little amount is not a problem).

Blend it into a smooth paste. Add enough water to make into smooth batter. The batter should be little bit thinner than the dosa batter.

Now add in salt and baking soda and mix well.

Heat a pan. Try to use non stick. Pour a ladleful of the batter in it, don’t spread the batter..It will spread automatically.

Drizzle some oil around the sides. Cover it with a tight fitting lid and let it cook for a min.

Now there will be small holes formed over the top. Remove and Serve..

Notes:
If there is no holes formed, add some more baking soda or check if the batter is thick..If it is thick add some water and adjust the consistency.

In the morning it will be all foamed up and well soaked
transfer it to a blender..If there is lot of buttermilk,drain some off..
and make into a smooth puree
transfer to a bowl and adjust the consistency by adding some water
add salt and baking soda
and mix well
Pour a ladleful of batter over a hot tawa..Don't spread it...Drizzle some oil
Cover with a lid and let it steam
till cooked
Serve with any Spicy Chutney
